Curcumin(70%),Demethoxycurcumin(15%) and Dimethoxycurcumin(10）are the main parts of the turmeric colour.We can see saffron yellow crystallizing or powder with our naked eyes.It is easily acetic acid glacial-soluble. It is absolute a natural pigment abstracted from the rootstalk of Zingberaceae Curcuma Longa L. by modern biotechnology.Widely used in foodstuff industry,e.g.candy,ice cream, carbonated beverage, artificial butter,jelly, dried turnip, curry powder etc as natural coloring. Also to be taken as an indicator of chemical reactions.
